Description

Lobo Accord is a food additive containing a blend of phosphates designed to help bind and emulsify minced meat. It helps retain moisture, improve meat adhesion and create a firmer texture in products such as meatballs, sausages and pork rolls.

How to Use

Use 0.3% of the total meat weight:

• 1 kg meat → 3 g (approximately 1 teaspoon)
• 5 kg meat → 15 g (approximately 5 teaspoons)
• 1 packet → approximately 33 kg of meat

Mix the Accord evenly into the meat while grinding or blending. Use fresh, well-chilled meat and work quickly so the meat does not become warm. 

For meatballs, sausages and similar products, LOBO recommends cooking in hot water at approximately 70°C rather than boiling water, then transferring the cooked products to cold water.
